Agree with the article, In regards to soya beans I love them – but the difference is I make my own tofu, milk, cream and sometimes flour and ‘cheese’ etc from organic soy beans not from the US where environmental concerns also come into to soya bean production, and with water filtered with reverse osmosis. It doesn’t have to be fermented to be healthy – we’ve been consuming soy for thousands of years in Asia with no problems, until GM and pollution came into it. Fermented soy is a delicacy there and tofu (and gluten) are used plentifully without being fermented however and of course fermented plants are much easier on human digestion.
